Watermelon and Feta Salad

I'm an Instagram ADDICT. Really though, who isn't these days?

One of the reasons I love Instagram is because I find a lot of really great inspiration through people or companies that I follow. The reason I became so interested in blogging in the first place is for the same reason. I love being inspired by people's posts and pictures, because I get so many new ideas to try out for myself. Seriously, most of the time, the blogs I read in the evening influence the next day's outfit. Other times, I get recipe ideas through blogs and Instagram.

I recently saw a picture of watermelon and feta salad on Food Network Canada's Instagram. It looked so appealing and of course, brought back memories from last summer, where I sat on the dock at a friend's cottage, munching on the very same thing.

This isn't a food combination I'd really thought of since then, so I went to the store and bought the ingredients to make my own.   

INSPIRATION
 




There was no real "recipe" to follow for this type of salad. I just tossed the following ingredients together and it was fabulous!

- Cubed Watermelon
- Finely diced red onion
- Crumbled Feta
- Parsley (although mint or basil would be delicious instead)
- A dash of pepper (no salt because of the feta being so salty)
- Drizzle of EVOO and Red Wine Vinegar

What was the best part of this creation, you wonder? I posted a picture of the salad on Instagram with a "shout-out" to Food Network, and got the notification below:


It's the simple pleasures in life, right?! :)

  4. I had that in a restaurant by accident last summer (it came as a side) and although the idea sounded so weird, it was actually amazing! I agree that it was an unexpected combo but works:)
